Not the highest priority in the world, but following enhancement would make my life much easier. In the "Ask the User" section of Views allow ordering of the fields by either or both of - manual sorting (as in many other places) - same order as from Columns
Its just that users are used to seeing fields in a particular order.

Agreed. I think this was part of the roadmap that Slava mentioned a little while ago...not certain though. Putting them alphabetically would make sense.
